摘 要:建立了电阻抗法快速检测罐藏食品商业无菌的方法体系。应用直接阻抗法检测低酸性罐藏食品、间接阻抗法检测酸性罐藏食品,并分别与国标法GB 4789.26—2013《食品安全国家标准食品微生物学检验商业无菌检验》进行比对。结果表明,建立的电阻抗法与国标法的检测结果完全一致,但比国标方法缩短了7 d的时间,最多3 d即可判定样品是否为商业无菌。方法简便快速、灵敏度高,且准确可靠,适用于污染菌来源不明确的、不同品种的罐藏食品,具有广泛的适用性和实用性。A methodology for rapid detection of commercial sterility in canned food was established by impedance method. Application of direct impedance method to detect low acid canned food, and indirect impedance method to detect the acidic canned food, and compared with the national standard method GB 4789.26—2013 〈National food safety standard Food microbiological examination: Examination of commercial sterility〉 respectively. The study showed that the testing results of the impedance method were completely consistent with that of national standard method. Meanwhile, the detection time was shorter than that of conventional method of 7 days. The sample could be determined whether was commercial sterility within 3 days. The impedance method was simple, rapid, sensitive, accurate and reliable, and it was suitable for unknown source of microbial contamination and different varieties of canned food, with a wide range of applicability and practicality.
