不同批次南方鲜食枣枣吊果实品质对比分析

摘　　要：为综合比较南方鲜食枣-中秋酥脆枣不同批次枣果的品质特征,对白熟期及脆熟期枣果中的可溶性总糖、还原性糖、淀粉、维生素C、可溶性蛋白质及8种矿物质元素的含量进行分析研究。结果表明:不同批次不同时期枣果内的营养成分含量不同。白熟期时,第1批枣果中的K、Mg、Ca、Na、Fe和Zn等矿物质的含量占绝对优势,第2批枣中的还原性糖含量及维生素C含量最高,第3批的蛋白质含量、Mn含量及Cu含量明显高于前2批。脆熟期时,第1批的维生素C含量、含Ca量及含Cu量比其他2个批次都高,但第2批枣的可食率、可溶性总糖、还原性糖、淀粉及可溶性蛋白质的含量都是最高的,第3批营养成分的优势主要体现在Mg、Na、Mn及Zn元素的含量上。In order to compare quality charactefistcs of different batches in a Southern fresh jujube named Mid-autumn Crisp jujube comprehensive. In this study, Jujube fruits at white ripe stage and mature period were researched to analyze the content of total soluble sugar, reducing sugar, starch, vitamin C, soluble proteins and eight different mineral elements. The results showed that the nutrimental compositions presented different in distinct period. What＇s more, it showed a declining trend from white ripe stage to mature period .At white ripe stage, the first fruit had higher content of K, Mg, Ca, Na, Fe and Zn. Reducing sugar and vitamin C at the second fruit were the highest among the three batches of jujube. The content of soluble proteins, Mn and Cu were significantly higher than another two jujube fruits. When during mature period, the content of vitamin C, Ca and Cu of the first fruit were the highest. But for the second fruit, the percentage of esculent part of fruit is very high. And it had the highest content of total soluble sugar, reducing sugar, starch, soluble proteins. Compared with the first two batches of jujube fruits, the advantages of third fruit mainly embodied in the content of Mg, Na, Mn and Zn.
