云南三个地方猪种肌肉脂肪酸组成分析

摘  要:为了分析不同地方品种猪肌肉脂肪酸含量差异,对云南3个地方猪种大河乌猪、撒坝猪和滇南小耳猪背最长肌脂肪酸含量进行了测定与分析。结果表明,滇南小耳猪和大河乌猪的饱和脂肪酸极显著高于撒坝猪(P<0.01),而撒坝猪的多不饱和脂肪酸极显著高于大河乌猪和滇南小耳猪(P<0.01),其中,撒坝猪单不饱和脂肪酸含量最高(50.58%),而滇南小耳猪的多不饱和脂肪酸含量最高(15.28%),表明云南地方猪种特别是滇南小耳猪肉质优良。本研究为云南地方猪种作为育种、杂优利用素材的推广以及遗传资源保护提供了肉质特性方面的基础资料。Contents of fatty acid of three Yunnan pig breeds were detected in pig longissimus dorsi.The contents of SFA in Diannan small-ear pig and Dahe black pig were significantly higher than Saba pig(P<0.01).The contents of UFA in Saba pig were significantly higher than Diannan small-ear pig and Dahe black pig.The contents of MUFA in Saba pig were the highest(50.58%)and the contents of PUFA in Diannan small-ear pig were the highest(15.28%),which indicated that meat quality of Diannan small-ear pig is more excellent.The study provided basic information on meat quality of Yunnan pig breeds as breeding materials,heterosis utilization and genetic resources protection.
