摘　　要：氧化与抗氧化、衰老与抗衰老是食品科学和营养科学研究的热点。天然抗氧化剂具有来源广泛、提取率高、抗氧化活性强、与机体亲和力强和安全性高等优点。因此,从植物中寻找清除体内自由基新的抗氧化剂已经成为现代医药、保健行业的必然趋势。该文综述了植物抗氧化活性成分的研究进展,以期为梧州特色植物的研究与开发提供参考。Oxidation and anti-oxidation,aging and anti-aging are the research focuses of food science and nutrition science.Natural antioxidants have the advantages of rich resources,high extraction rate,antioxidant activity,affinity with the body and high security. Therefore,looking for new antioxidants from plants which can eliminate free radicals in the human body has become an inexorable trend in the modern medicine and health-care industry. This paper summarizes the research progress of antioxidant components in plants in order to provide a reference for the research and exploration of characteristic plants in Wuzhou.
