摘  要:目的研究南宁市3~6岁学龄前儿童膳食营养素摄入对体格指标、头发部分微量元素含量的影响,为今后评估幼儿营养状况及指导学龄前儿童合理膳食提供依据。方法对南宁市3所幼儿园201名3~6岁学龄前儿童进行营养调查,并测定幼儿头发中铜、锌、铁、钙、镁的含量。结果 201名学龄前儿童平均身高、体重和胸围分别为105.71 cm、17.20 kg和17.20 cm,头发中铜、锌、铁、钙和镁含量分别为19.48、28.04、419.18、33.48和151.12μg/g。膳食中的能量、蛋白质、尼克酸、磷、锌与身高呈正相关(P<0.05),能量、蛋白质、碳水化合物、硫胺素、核黄素、尼克酸、维生素E、钙、磷、钾、镁、铁、锌、铜、锰与体重呈正相关(P<0.05),能量、蛋白质、尼克酸、磷、镁、铁、锌与胸围呈正相关(P<0.05)。膳食中的蛋白质、碳水化合物、硫胺素、尼克酸、维生素E、磷、镁、铁、锌、锰与发铜含量呈正相关(P<0.05),胡萝卜素、锰与发镁含量呈正相关,脂肪与发镁含量呈负相关(P<0.05),能量、蛋白质、碳水化合物、胡萝卜素、尼克酸、维生素E、镁、铁、锌、锰与发锌呈正相关(P<0.05),脂肪、维生素C与发钙含量呈负相关(P<0.05)。结论膳食摄入的营养成分与3~6岁学龄前儿童体格指标及头发中的微量元素与存在一定相关性,且头发中微量元素铜和锌则易受多种膳食营养成分的影响。在儿童生长发育过程中,应注意通过膳食合理、科学的补充营养物质。Objective The aim of this study was to study the effect of dietary nutrient intake on the physical indexes and the content of mineral elements in the hair of young children, so as to provide the reference for the nutritional status evaluation and reasonable dietary guidance in preschool children. Methods Nutritional survey was conducted on 201 children aged from 3 to 6 years old in three kindergartens in Nanning, and the contents of copper, zinc, iron, calcium and magnesium in the hair of children were measured. Results The average height, weight and chest circumference of 201 preschool children were 105.71cm, 17.20kg and 17.20cm, respectively. Average contents of copper, zinc, iron, calcium and magnesium in the hair were 19.48μg/g, 28.04μg/g, 419.18μg/g, 33.48μg/g and 151.12μg/g, respectively. The energy, protein, nicotinic acid, phosphorus and zinc in dietary were positively correlated with height (P〈0.05). The energy, protein, carbohydrate, thiamine, riboflavin, niacin, vitamin E, calcium, phosphorus, potassium, magnesium, iron, zinc, copper and manganese were positively correlated with body weight (P〈0.05). Energy, protein, niacin, phosphorus, magnesium, iron and zinc were positively correlated with chest circumference (P〈0.05). The protein, carbohydrate, thiamine, niacin, vitamin E, phosphorus, magnesium, iron, zinc and manganese in dietary were positively correlated copper content in hair (P〈0.05). Carotene and manganese were positively correlated with magnesium content in hair (P〈0.05). Fat was negatively correlated with magnesium content in hair (P〈0.05). Energy, protein, carbohydrate, carotene, niacin, vitamin E, magnesium, iron, zinc and manganese were positively correlated zinc content in hair (P〈0.05). Fat and vitamin C were negatively correlated with calcium content in hair (P〈0.05).
