摘 要:目的通过对某钢铁厂高温作业工人营养教育干预效果进行评价,为开展系统有效的营养教育干预提供科学依据。方法选取某钢铁企业649名高温作业工人作为调查对象,随机设立干预组和对照组,对325名干预组的工人给予营养教育干预措施,对照组不采取任何干预措施。并在干预前、干预后3个月、干预6个月时,采用自行设计的调查表评价干预前后研究对象的营养知识、态度和行为的变化。采用描述性分析、重复测量设计的方差分析等进行统计分析。结果高温作业工人的营养知识、行为状况较差,经干预3个月和6个月后,干预组的知识、态度、行为得分均明显提高(P<0.05),其中以营养知识得分的变化最为明显,由干预前均值比的30.2%上升为干预6个月后的77.8%;行为改变得分相对较低,由干预前均值比的36.2%增加为干预6月后的66.1%。结论高温作业工人营养知识和行为较差,定期持续的营养知识教育可提高高温作业工人的营养知识水平,使其提升良好的营养态度,进而养成良好的膳食行为习惯。Objective This study means to provide scientific evidence for the implementation of systematic and effective nutrition education intervention by evaluation on the effect of nutrition education intervention on the high temperature workers in an iron and steel factory.Methods 649 workers were randomly selected and divided into intervention and control group.325 workers from the intervention group received nutrition education while the control group nothing.Self-designed questionnaires were used to evaluate the change in nutrition knowledge,attitude and behavior before and after 3 and 6 months of intervention.Descriptive analysis and ANOVA analysis for repeated measurement design were applied for statistical analysis.Results The baseline nutrition knowledge and behavior of these workers were poor and not good.After 3 and 6 months' intervention,intervention group scored obviously higher in the aspect of knowledge,attitude and behavior(P<0.05),with the most significant change being observed in nutrition knowledge,rising form 30.2%to 77.8% after 6 months' intervention.Slightest change was observed in behavior,rising form 36.2% to 66.1% after 6 months' intervention.Conclusion High temperature workers have poor nutrition knowledge and unhealthy behavior.Regular and continuous nutrition education can improve the level of the workers' nutrition knowledge,cultivate good attitude,and thus to form good dietary behavior.
