摘 要:目的了解江西省市售面制品中氨基脲污染现状。方法采集江西省内市售面制食品,在酸性条件下对样品进行水解,经邻硝基苯甲醛衍生化,乙酸乙酯提取后,以乙腈和0.1%(V/V)甲酸-水溶液为流动相进行梯度洗脱,经Waters BEH C18色谱柱(50 mm×2.1 mm,1.7μm)分离,电喷雾正离子模式电离(ESI+),多反应监测(MRM)模式检测,同位素内标法定量。结果对江西省7个地市面包、蛋糕、饼干等面制品中的氨基脲进行监测,结果发现面包、蛋糕、饼干中氨基脲阳性检出率分别为84.0%、8.6%、5.7%,阳性样品中氨基脲的污染水平为21μg/kg^1 288μg/kg。面包中软质面包、松质面包、硬质面包、脆质面包的检出率分别为90.0%、83.3%、75.0%、80.0%。结论江西省市售面制品中面包的氨基脲污染较为严重,对人体健康存在威胁。Objective To investigate the status of semicarbazide contamination in flour products sold in Jiangxi province. Methods Flour products sold in Jiangxi province were collected. The samples were hydrolyzed under the acidic solution,derivated with 2-NBA,then extracted by ethyl acetate. The separation was performed on a Waters BEH C18 column( 50 mm × 2. 1 mm,1. 7 μm) using the mobile phase composed of acetonitrile and 0. 1% formic acid( V/V) aqueous solution with a gradient elution program. Tandem mass spectrometric detection was performed in multiple reaction monitoring( MRM) scan mode with a positive electrospray ionization( ESI+) source. The method used stable isotope internal standard quantitation. Results Semicarbazid in bread,cakes and biscuits in 7 cities in Jiangxi province were monitored. The positive rates of semicarbazide in bread,cake and biscuit were 84. 0%,8. 6% and 5. 7%,and the pollution level of semicarbazide in positive samples were within 21 μg/kg-1 288 μg/kg. The positive rates of soft bread,loose bread,hard bread and fragile bread were 90. 0%,83. 3%,75. 0% and 80. 0%,respectively. Conclusion The flour products sold in Jiangxi province are seriously polluted by semicarbazide,which poses a threat to human health.
