摘 要:通过对北京市城镇居民乳制品消费的调研分析,北京市城镇居民倾向于购买液态奶和酸奶,且"伊利""蒙牛""三元"是绝大多数消费者的品牌选择。购买奶粉的消费者较少,且国外品牌更受消费者欢迎。消费者的乳制品认知较为成熟,但是乳制品购买渠道和信息获取渠道有待拓展。最后提出未来北京市城镇居民乳制品消费的发展思路:重视乳制品质量安全、增强质量安全信息及时性和透明度、拓宽乳制品购买渠道和产品信息获取渠道。Abstract: Through research of urban residents' consumption of dairy products in Beijing- the authors found that Beijing's urban residents tended to purchase liquid milk and yogurt, and Yili, Mengniu and Sanyuan were the most majority choices. There were few consumers to purchase milk powder, and foreign brands were more popular with consumers. Consumers had a mature understanding of dairy products, while the purchasing channels and information acquisition channels needed to be expanded. Finally, the paper put forward the development ideas of urban residents' dairy consumption in Beijing in the future, which were focusing on the quality and safety of dairy products, strengthening the timeliness and transparency of quality and safety infomation and widening the purchasing channels and product information acquisition channels of dairy products.
