摘　　要：目的监测武汉市市售动物源性食品中磺胺类抗生素残留水平,为其潜在健康风险的评估与控制提供参考依据。方法在武汉市12个区大型超市和农贸市场模拟购买动物源性食品样品351件后进行前处理,超高效液相色谱-质谱法同步检测磺胺类抗生素残留水平,以SPSS18.0对检测结果进行分析。结果不同磺胺类抗生素组分检出率高低顺位为磺胺甲恶唑(80/351)>磺胺甲噻二唑(59/351)>磺胺氯哒嗪(39/351)>磺胺异恶唑(36/351)>磺胺二甲基嘧啶(35/351)>磺胺吡啶(18/351)>磺胺甲基嘧啶(1/351),差异有统计学意义(P<0.05)。肉类和水产类除STZ外其他组分均有检出,蛋类和奶类却只有STZ检出。不同磺胺类组分在食品中残留量存在关联的同时,各组分在不同食品类别中的残留存在倾向性。结论动物源性食品中磺胺类抗生素残留现状不容忽视,食品安全监管部门在加强中抗生素残留监管的同时,应协调农业及畜牧业管理部门尽快规范饲料生产及养殖领域的兽药使用。Objective To monitor the residue of sulfonamides antibiotics in commercial animal-origin food in Wuhan city and provide references for the risk assessment and control on their potential health hazards. Methods A total of 351 samples were collected randomly in the supermarkets and terminal-market in Wuhan city. Sulfonamides antibiotic residue were determined by UPLC-MS,and the data were analyzed by SPSS18.0. Results The order of detected rates from high to low were SMZ（80/351）, STZ（59/351）, SCP（39/351）, SIA（36/351）, SM2（35/351）, SPD（18/351）, SM（1/351） and the difference was statistically significant（P〈0.05）. Beside of STZ, other components were all detected in meat and aquatic products. However, STZ was the single sulfonamides antibiotics component detected in eggs and milk. Some correlation was explored between different sulfonamides antibiotics component in concentration, and different components presented tendentiously contaminate respective food. Conclusion The status of sulfonamides antibiotics in commercial animal-origin food cannot be ignored, enhancing superintendency strength, while the government should regulate the use of veterinary drugs in the field of feed production.
