摘 要:采用氨基酸自动分析仪测定了屈头鸡中果皮、果肉、果仁三个部位的17种氨基酸的含量.实验结果表明:屈头鸡果皮、果肉、果仁中均含有丰富的对人体有益的氨基酸,不同部位氨基酸总量在3.36g/100g^9.07g/100g之间,其中果仁中总氨基含量最高为9.07g/100g;果皮次之4.61g/100g;果肉的含量最低为3.36g/100g.方差分析结果显示,三个部位的氨基酸含量存在显著差异.In this paper, 17 kinds of amino acids was determined, amino acid compositions of three parts of pericarp,flesh, and nuts form the Capparis versicolor Griff.The results showed that the pericarp, flesh, nuts were rich amino acids beneficial to human body. The total amino acids at different positions of in the 3.36 g/100 g ~9.07 g/100 g.The total amino acids in nuts was the highest,which was up to 9.07 g/100 g; flesh was 4.61 g/100 g; the total amino acids in the pulp was the lowest, which was 3.36 g/100 g. The results of the variance analysis indicate that three parts of the amino acids exist significant differences.
