摘　　要：针对真空低温油炸加工过程中存在的物料粘结成块、受热不均、含油量高等问题,详细分析了Modbus RTU协议及通讯设置,提出了Modbus RTU通讯在真空低温油炸设备控制系统的应用方案。该系统优化并改进了传统油炸加工技术的诸多不足,在一定程度上提高了生产效率及产品质量的合格率。Aiming at the problems of material bonding into blocks,uneven heating and high oil content during vacuum low-temperature frying process, this paper analyzes the the working mechanism of Modbus RTU communication. It discusses the application of Modbus RTU communication in vacuum low-temperature frying equipment control system. The system optimizes much deficiency in traditional frying processing technology. It improves the efficiency and quality pass rate of production to a certain extent.
