摘  要:为了对成年酉州乌羊的肌肉营养成分进行分析,评价其对肌肉嫩度和风味的影响,试验随机选择成年酉州乌羊和本地白山羊母羊各11只,屠宰后进行肉品质与肌肉营养成分的测定。结果表明:成年酉州乌羊母羊肌肉pH值显著高于本地白山羊(P〈0.05),剪切力显著低于本地白山羊(P〈0.05),其肌肉嫩度优于本地白山羊;酉州乌羊肌肉中必需氨基酸与总氨基酸的比值(EAA/TAA)、鲜味氨基酸与总氨基酸的比值(FAA/TAA)均高于40%,可提供优质的蛋白质肉类;酉州乌羊肌肉中的硒含量显著高于本地白山羊(P〈0.05),肌肉中矿物质元素丰富。说明酉州乌羊肌肉中含有优质的蛋白质和丰富的矿物质元素,是具有优秀口感和高营养价值的肉用山羊品种,其肌肉营养成分对肉的嫩度和风味具有一定影响,值得进一步开发和研究。To analyze muscle nutritional components of adult Youzhou Black goats and to evaluate its effect on muscle tenderness and flavor,11 adult female Youzhou Black goats and local White goats each were randomly selected in this experiment. Meat quality and nutritional components were determined after the slaughter. The results showed that the p H value of muscle in adult female Youzhou Black goats was significantly higher than that in local White goats( P〈0.05),while its shear force significantly lower than that in local White goats( P〈0.05),which meant that its muscle tenderness superior to that in local White goats. The ratios of essential amino acids to total amino acids( EAA/TAA),and of flavor amino acids to total amino acids( FAA/TAA),were higher than 40% respectively in muscle of Youzhou Black goats,which could provide high-quality protein meat. The selenium content in muscle of Youzhou Black goats was significantly higher than that in local white goats( P〈0.05),and mineral elements were rich in muscle. The results suggested that Youzhou Black goat’s muscle contains high-quality protein and abundant mineral elements,which inferred that Youzhou Black goat is a meat goat breed of being good taste and high nutritional value. Its muscle nutritional components had a certain effect on meat tenderness and flavor,which deserved further exploitation and research.
