摘  要:脂肪是蚕蛹的主要营养成分之一。对我国家蚕原料茧生产中每年产生的12万t干蚕蛹以及野蚕类蚕茧生产中的蚕蛹进行综合加工利用,将有助于实现传统养蚕业的优化升级和为人们提供优质油脂保健食品。随着蚕蛹油脂的应用向多元化发展,对蚕蛹油脂组成及加工利用技术的研究与开发也不断进步。本文概述近年来国内外在家蚕和部分野蚕的蛹油脂组分及加工利用方面取得的主要研究进展,并提出未来该领域的重点研发方向。今后应在对蚕蛹脂肪酸组成分析的基础上,进一步阐明蚕蛹油脂的特性及组成特征;将作为保健食品、医药品和化妆品原料的蚕蛹油脂,推向蚕蛹油脂精制及高端食用保健油脂的研制与开发。Lipid is one of the major nutritional components of silkworm pupae. The comprehensive processing and utilization to 120 000 tons of dried silkworm pupae from raw cocoon production each year and to pupae from wild silkworm cocoon production contribute to both the optimization and upgrading of traditional sericulture and the development of health food with high quality oils and fats. With the development of diversified application of silkworm pupal oil,great progress has been made on research and development on composition,processing and utilization of silkworm pupal oil. This article summarizes the main research progresses on composition,processing and utilization of pupal oil produced from domestic silkworm( Bombyx mori) and some wild silkworm species,and puts forward the key directions for future research and development in this field. It is suggested that the characteristics and compositions of silkworm pupal oil should be further clarified on basis of analyzing fatty acid composition of silkworm pupal oil. Furthermore,the current application of silkworm pupal oil as raw material for health food,medicines and cosmetics should be pushed forward into refining silkworm pupal oil and developing health food with high quality oils and fats.
