摘　　要：目的了解宁夏地区市售鸡蛋和鸡肉中四环素类抗生素的使用情况,为评估其潜在健康风险提供参考依据。方法 2016年-2017年在宁夏随机抽取8个市、县(区)市售鸡蛋和鸡肉样品共124份,按照《国家食品安全风险监测手册》的《动物源性食品中四环素类药物残留量测定的标准操作程序液相色谱—质谱/质谱法检测方法》检测四环素类抗生素残留。样品前处理后经高效液相色谱-质谱法检测。以SPSS 17.0软件对检测结果进行分析。结果宁夏2016年-2017年不同年份的鸡蛋以及鸡肉中四环素类抗生素检出率差异均无统计学意义。四环素类抗生素检出率高低排序依次为强力霉素>土霉素>金霉素>四环素。结论鸡蛋和鸡肉中四环素类抗生素残留现状不容忽视,有关部门应加强食品中抗生素残留的监管,尤其应加速实现对饲料生产企业、养殖企业等单位的兽药使用规范。Objective To investigate the use of tetracycline antibiotics in eggs and chicken in Ningxia,so as to provide references for the risk assessment on their potential health hazards. Methods A total of 124 samples of egg and chicken were randomly collected in eight municipal,county（district）. In accordance with the Standard Operating Procedures for Determination of Tetracyclines Residues in Animal Derived Foods Detected by LC-MS/MS in the National Food Safety Risk Monitoring Manual,antibiotic residues of tetracycline were detected. Tetracycline antibiotic residues were determined by high performance liquid chromatography-mass spectrometry（LC-MS/MS）,and the data was analyzed by SPSS 17. 0. Results There was no statistical significance on the differences of positive rate of tetracycline antibiotic residues in eggs and chicken from 2016 to 2017. The detection rates of tetracycline antibiotics in the samples were doxycycline,oxytetracycline,chlortetracycline,tetracycline in the order of high to low. Conclusion It is of great concern that tetracycline antibioticsresidues exist in eggs and chicken. Relevant departments should strengthen the supervision of antibiotics residues in food. In particular,the use regulation of veterinary drug should be accelerated in the feed production enterprises,aquaculture enterprises and other units.
