摘  要:鸭蛋因含有多种促进人体健康、提高免疫力的营养成分,而广受消费者的青睐。蛋品质是衡量家禽生产性能的重要指标,影响蛋的食用价值和商品价值。因此,研究鸭蛋品质的影响因素具有非常重要的意义。文章从不同品种、饲养方式、饲粮营养和处理方式对鸭蛋品质及风味的影响作以论述。Duck eggs are widely favored by consumers because they contain many nutrients that promote human health and enhance immunity. Egg quality is an important index to measure poultry production performance,affecting the food value and commodity value of eggs. Therefore, it is very important to study the influencing factors of duck egg quality. The effects of different varieties, feeding methods, diet nutrition and processing methods on the quality and flavor of duck eggs were discussed in this paper.
