摘 要:为比较扬州鹅及其杂交配套组合肉用仔鹅肌肉脂肪酸和硫胺素(维生素B1)含量,以扬州鹅纯繁群体(A♂×A♀、B♂×B♀)为对照组,以其4个杂交配套组合(B♂×A♀、K♂×A♀、D♂×A♀和C♂×A♀)为试验组,分别采用气相色谱仪、高效液相色谱仪测定肌肉脂肪酸和硫胺素含量。结果表明:试验组B×A、K×A胸肌中部分不饱和脂肪酸含量显著或极显著低于其他各组,而胸肌中大部分饱和脂肪酸含量显著或极显著高于2个对照组;腿肌中,试验组C×A部分脂肪酸含量极显著高于对照组B×B,试验组K×A、D×A部分脂肪酸含量极显著高于对照组A×A。对照组B×B肌肉硫胺素含量(母鹅胸肌除外)均显著或极显著高于其他各组,试验组D×A胸肌硫胺素含量显著高于其他各试验组。由此可见,相对于扬州鹅纯繁群体,杂交配套组合在一定程度上提高了肌肉脂肪酸含量,但硫胺素含量并没有提高。In this study,two Yangzhou geese pure propagation groups(A♂×A♀,B♂×B♀)were used as the control group and its four different crossbred combinations(B♂×A♀,K♂×A♀,D♂×A♀ and C♂×A♀,the same as below)were used as the experimental group.A total of six groups were selected as test materials to compare their contents of fatty acid and thiamine.The content of fatty acid in muscle was measured by the gas chromatography,and the thiamine content in muscle was measured by the high performance liquid chromatography.The results showed that partial unsaturated fatty acid level of breast in test groups B×A,K×A was significantly or very significantly lower than that of the other groups(P〈0.05 or P〈0.01),and most saturated fatty acid level were significantly or very significantly higher than that of the control groups(P〈0.05 or P〈0.01).For the content of partial fatty acid in the leg muscle,the control group B×B was extremely lower than that of the test group C×A(P〈0.01).And the content of partial fatty acid in test groups K×A,D×A were extremely higher than that of the control group A×A(P〈0.01).The thiamine level except the breast of the geese in the control group B×B was significantly or very significantly higher than those of the other groups(P〈0.05 or P〈0.01).The thiamine level of breast in test group D×A was significantly higher than the other test groups(P〈0.05).In conclusion,the content of fatty acid in muscle of Yangzhou geese crossbred combinations was improved,and the muscle thiamine content was not increased.
