摘  要:牦牛血资源的开发利用不够,将牦牛血用于开发糖基化亚硝基血红蛋白产品鲜见报道.研究的目的在于采用单因素试验和正交试验优化糖基化亚硝基牦牛血红蛋白制备过程中壳聚糖浓度、p H值、加热温度和时间.结果表明,最佳反应条件是:血红蛋白溶液与壳聚糖溶液浓度比2:1,p H 6.0,反应温度55℃,反应时间35 min,进行低速搅拌.Yak blood is rich in nutrients, but this resource has not been fully utilized. Currently, using yak blood to develop gly- cosylated nitroso - hemoglobin has not been reported. The objective of this study was to optimize the concentration of chitosan, pH value, heating temperature and heating time during the preparation of glycosylated nitroso yak hemoglobin by using single factor test and orthogonal test. The results showed that the optimal reaction conditions were that the ratio of the concentration of hemoglobin solution and chitosan solution was 2:1 ,pH 6, reaction temperature 55 ℃, reaction time 35min, and under low speed agitation.
