摘　　要：目的:对高效液相色谱测定充气糖果中胭脂红酸的方法及效果展开分析。方法:采用水/氨水/乙醇混合液超声提取充气糖果中的胭脂红酸,借助水浴的方法将提取液蒸至近干,并用氨水定容。随后应用C_(18)色谱柱,以及流动相为甲醇/乙腈与浓度为0.01%的磷酸溶液,以1.0ml/min的流速进行梯度洗脱,并将检测波长设为494nm。结果:在2.5至40.0mg/L以内,胭脂红酸的线性良好,检出限是0.3mg/kg,回收率高达86.9%至102.2%,相对标准偏差(RSD)为1.20%至1.78%。结论:高效液相色谱测定方法具有操作简便、结果准确以及重现性良好等优势,可作为充气糖果中胭脂红酸一种重要的检测方法。Objective：To analyze of high performance liquid chromatographic determination of carminic acid in inflatable candy methods and effects. Methods：Used water/ammonia/ethanol mixture to extract the red acid in the inflatable confectionery, the extract liquid is steamed to the near dry by means of water bath, and the ammonia water is used to make the mixture. Then using C18 chromatographic column and mobile phase of methanol/acetonitrile phosphoric acid solution with concentration of 0.01%, to 1.0 ml/min velocity gradient elution, and the detection wavelength is set to 494 nm. Results：Within the 2.5 to 40.0 mg/L, carmine acid linear is good, the detection limit is 0.3 mg/kg, recovery rate is as high as 86.9% to 102.2%, relative standard deviation（RSD） is 1.20% to 1.78%. Conclusion：High performance liquid chromatographic method has simple operation, the advantages of the results are accurate and with good reproducibility, can be used as a kind of important determination method of carmine acid in inflatable candy.
