摘 要:以鹅掌柴蜂蜜为研究对象,对鹅掌柴蜂蜜、常见掺假物质和掺假蜂蜜的果糖、葡萄糖、蔗糖和麦芽糖的含量进行检测和分析;绘制以果糖含量为X轴,麦芽糖含量为Y轴与果葡糖浆、玉米糖浆、麦芽糖浆含量的等值线图;建立鹅掌柴蜂蜜标准糖类指纹图谱,同时对常见掺假物质及掺假蜂蜜的相似度及99%置信区间进行分析。结果显示,当掺假物质为果葡糖浆时,葡萄糖、果糖和蔗糖的变化不差异性不大,当掺假物质为玉米糖浆和麦芽糖浆时,果糖和葡萄糖的含量随着掺假量的增加而减少,麦芽糖含量随着掺假量的增加而增加,蔗糖含量均为未检出;掺假物质与果糖、麦芽糖的等值线图直观地呈现出鹅掌柴蜂蜜掺假玉米糖浆、麦芽糖浆的分布,可以定量鉴别鹅掌柴蜂蜜掺假情况;鹅掌柴蜂蜜之间的相似度均大于0.999,说明标准糖类指纹图谱能够反映鹅掌柴蜂蜜的共同特性,同时也能够反映掺假蜂蜜与鹅掌柴蜂蜜之间的差异;计算出鹅掌柴蜂蜜中果糖、葡萄糖、蔗糖和麦芽糖含量99%置信区间,果糖的含量范围为42.27 g/100 g^47.79 g/100 g,葡萄糖的含量范围为21.56 g/100 g^27.53 g/100 g,蔗糖为未检出,麦芽糖为0.92 g/100 g^1.55 g/100 g,研究结果可以为蜂蜜的产品质量控制和掺假检测提供理论依据。The content of fructose,glucose,sucrose and maltose were detected and analysed in schefflera honey,common adulterated material and the adulterated honey;Draw in fructose,maltose content and fructose syrup,corn syrup,malt syrup content for contour map;Establish schefflera carbohydrate honey standard fingerprint,and similarity of adulterated material and adulteration,99 % confidence interval of schefflera honey were analyzed. The results showed that when the adulterated material was fructose syrup,the change of glucose,fructose and sucrose was not obvious. When the adulterated material was corn syrup or malt syrup,the content of fructose and glucose decreased as the amount of adulteration,maltose content increased with the increment of adulteration,sucrose content were not detected;The contour maps were visually presented the distribution of corn syrup and malt syrup,and were quantitatively identified schefflera honey adulteration situation;Similarity between schefflera honeys were greater than 0.999,the standard carbohydrate fingerprint could reflect the common characteristics of schefflera honey,also could reflect the adulteration honey and the difference between schefflera honey;Calculate the fructose,glucose,sucrose and maltose content of schefflera honey in the 99 %confidence interval,the content of fructose range was 42.27 g/100 g-47.79 g/100 g,the content of glucose range was 21.56 g/100 g-27.53 g/100 g,sucrose was not detected,maltose was 0.92 g/100 g-1.55 g/100 g,the results can provide honey adulteration product quality control and testing theory.
