菠萝产香菌的筛选与鉴定

摘　　要：利用组织块法、匀浆分离法、富集分离法从菠萝中初筛得到8株产香菌,复筛出1株产花草香的菌株ZFF1。经形态学和分子鉴定,菌株ZFF1鉴定为葡萄有孢汉逊酵母(Hanseniaspora uvarum),属于安全菌株。Eight aroma-producing strains were screened preliminarily from pineapples by using the methods of tissue culture,homogenate separation,and enrichment and separation. And a strain,ZFF1 producing the fragrances of flowers and herbs from8 strains was obtained after secondary screening. The strain ZFF1 was identified as Hanseniaspora uvarum by morphological and molecular identification,and it was safe.
