摘  要:采用核酸溶出检测法检测了德氏乳杆菌保加利亚亚种菌株在不同生长阶段下的自溶活性变化,并比较了12株菌株在对数生长中期的自溶活性差异。结果表明,德式乳杆菌保加利亚亚种对数生长期的菌体细胞自溶活性最高,稳定期和衰退期的菌体细胞自溶活性依次降低;不同菌株在对数生长中期的自溶活性差异显著,筛选到3株高自溶活性菌株和4株低自溶活性菌株;扫描电镜观察显示高自溶活性菌株自溶菌体细胞表面出现孔洞,而低自溶活性菌株自溶菌体细胞表面出现轻微萎缩。本研究为德氏乳杆菌保加利亚亚种自溶活性的调控和改造以及开发优良酸乳发酵剂提供了理论依据。The autolytic activities of Lactobacillus delbrueckii subsp. bulgaricus(LDB) strains in different growth phase were measured by the nucleic acid leaching assay and the autolytic activities of 12 strains in the mid-log phase were compared. The autolytic activities of LDB cells were the highest in the logarithmic growth phase and decreased in turn in the stationary phase and the decay phase. The autolytic activities of12 LDB strains in the mid-log phase were significantly different, therefore 3 strains of high autolytic activity and 4 strains of low autolytic activity were screened. The scanning electron microscopy revealed cavities in the surfaces of autolytic cells of the high autolytic strains, whereas mildly atrophies on the surfaces of autolytic cells of the low autolytic strains. The study provided a theoretical basis for the regulation and alteration of LDB autolytic activity and the development of good yogurt starters.
