摘　　要：营养棒作为代餐食品的一种良好载体,通过对上游功能性原料的选择添加来满足不同消费群体的功能需求,实现产品细分。功能性糖醇是这个载体食品的最基本原料之一,主要作为功能性甜味剂、成型助剂,保湿剂、以及组织改进剂。本文通过对几种功能性糖醇生理功效、物化性质的分析,说明几种糖醇在营养棒中的应用。As a good carrier for meal replacement food, nutrition bar can meet the functional needs of different consumer groups by adding the selection of upstream functional materials to achieve product segmentation. Functional sugar alcohol is one of the most basic raw materials for this carrier food. Its main role in the nutritional bar formula is functional sweeteners, molding aids, moisturizers, and tissue improvers. The purpose of this paper is to illustrate the suitable application of several sugar alcohols in nutrition bars by analyzing the physiological effects, physical and chemical properties of several functional sugar alcohols and the appearance of practical production applications.
