摘  要:采用常规方法测定分析了F_3代大鳞鲃鱼肌肉营养成分组成与含量。结果显示,F_3代大鳞鲃鱼水分含量为78.45%,灰分含量分别为2.36%,粗蛋白含量为24.28%,粗脂肪含量为5.63%。氨基酸总量为19.54%,必需氨基酸含量为7.97%,必需氨基酸占总氨基酸的比值为40.78%,氨基酸指数为81.49。F_3代大鳞鲃鱼肌肉矿物质元素含量丰富、合理,是食用价值很高的优质鱼类。Nutritional components in the muscle of F_3 Barbus.capito were tested and analyzed with routine methods.The results showed that content of moisture,ash,crude protein and crude fat in fresh muscle was78.45%,2.36%,24.28% and 5.63%,respectively.The total content of amino acids was 19.54%,essential amino was 7.79%,the percentage of essential amino acids in total amino was 40.78%;the amino acid indexes were81.89.It was indicated that F_3 B.capito had better nutritive value,raising value,deserving exploitation and utilization.
