摘　　要：植物油的利用是非常重要的。为了充分地利用这一重要的可再生资源——植物油,并进一步对植物油进行深加工,获得工业等不同领域所需要的重要原料,本文对常见植物油(如大豆油、棉籽油、花生油等)的来源、提取方法、主要成份、水解方法、水解产物的分离与提纯以及脂肪酸的检测等六个方面进行了系统总结和分析,提出了一些建议。The utilization of vegetable oils is very important. In order to fully utilize the type of renewable resource,vegetable oil,to realize its further processing,and to further provide important materials in the fields of industry,etc.,the vegetable oil hydrolysis process at home and abroad,the sources,extraction methods,main ingredients,hydrolysis methods,separation and purification of common vegetable oils（ such as soybean oil,cottonseed oil,peanut oil,rice bran oil,etc.） were reviewed. Some suggestions about the treatment of vegetable oil were put forward.
