摘  要:探讨溶剂提取法提取红薯中不溶性膳食纤维的工艺条件。以液料比、碱液浓度和提取温度作为试验因素,通过单因素试验和Box-Behnken设计试验,对提取工艺条件进行了优化,并在此基础上建立提取动力学模型。结果表明:不溶性膳食纤维提取的最优工艺条件为液料比13.07∶1 m L·g^(-1),碱液浓度8.43 g·L^(-1),提取温度37.14℃,提取率达8.730%。以不同提取温度建立4种提取过程的动力学模型,经拟合模型比较,Logistic模型为最优拟合。This study examined the chemical extraction of insoluble fiber from sweet potato. Single factor method and Box-Behnken experimental design were applied to optimize the extraction process. On this ba-sis,extraction kinetic models were established. The results showed that the optimum technological condi-tions for the extraction of insoluble fiber were liquid ratio: 13. 07 ∶1 mL·g^-1,alkali concentration 8. 43 g·L^-1,extraction temperature 37. 14 ℃,under these conditions,the yield of insoluble fiber was 8. 730%. The kinetic models of 4 kinetic model were established under different concentration of alkali solution,and the Logistic model was the best fit.
