摘 要:为了进一步提高铁路服务质量、加强食品安全监督管理,对26列长交路旅客列车暑期食品安全开展调查。在分析长交路旅客列车暑期运输存在的食品安全管理制度不健全、从业人员卫生知识培训不到位、食品进货环节把控不严、色标管理存在差距等问题的基础上,提出健全食品安全管理制度、强化食品从业人员及管理人员培训、严控食品进货源头和贮存管理、加强色标管理防止交叉污染、及时维护保养设施设备、加强食品安全全过程监管等改进食品安全管理的对策。In order to further improve the quality of railway service and strengthen the supervision and management of food safety,an investigation was carried out into the food safety of 26 long route passenger trains in summer. Based on the analysis of the problems of imperfect food safety management system,inadequate health knowledge training of employees,lax control of food purchase links and gaps in color code management in summer transportation of long route passenger trains, this paper puts forward some countermeasures to improve food safety management,such as improving food safety management system,strengthening training of food employees and managers,strictly controlling the source and storage management of food purchase,strengthening color code management to prevent cross-contamination,timely maintaining and maintaining facilities and equipment,and strengthening supervision of the whole food safety process.
