摘 要:对采自云南省5个群体52头肉牛背最长肌第6~7肋间上脑肉样按国标方法进行理化品质测定,采用近红外光谱对其进行扫描,通过偏最小二乘法建立了牛肉MT、EE、CP、Ash、Asp、Thr、Ala、Val、Ile、Leu、Tyr、Phe、Lys、His、Arg等含量的近红外光谱预测模型,各模型R2验正超过0.66,其中MT、EE、CP和Ash含量的近红外光谱预测模型的R2验正分别达到0.866、0.883、0.668和0.812,预测模型达到应用的水平,可用于日常牛肉理化品质快速、准确预测。The high ribs samples of Iongissimus dorsi at 6-7th rib from Fifty-two beef in 5 populations in Yunnan province were collected, of which, the physical and chemical quality of beef were measured according to national standards. Through near infrared spectrum (NIFS) scanning, the prediction models of partial least- square by NIRS were established, including moisture, fat, protein, ash contents and Asp, Thr, Ala, Val, lie, Leu, Tyr, Phe, Lys, His and Arg contents, of which, the validation coefficient determinations (R2ev) of prediction models by NIRS were more than 0.66, the counterparts related to moisture, fat, protein, ash contents were 0.866, 0.883, 0.668 and 0.812 respectively, the prediction models reached the application level, and could be used to rapidly and accurately predict the physicochemical qualities of beef in our daily life
