摘  要:目的建立静态顶空气相色谱法测定奶酪中甲醛含量的新方法。方法取一定量奶酪样品,加入以还原剂0.1 mol/L硼氢化钠和1 mol/L氢氧化钠1∶10比例配制的反应液,使样品内甲醛还原为甲醇,50℃水浴、涡旋提取后直接进行顶空气相色谱FID测定,以外标法定量。结果在1.0~20.0 mg/L线性范围内,回归方程相关系数大于0.998,加标回收率在89.2%~110.8%之间,按照取样量2.0 g,定容体积5 ml计算,方法检出限为0.75 mg/kg,相对标准偏差(RSD)小于8.3%。结论本方法操作简便、快速、准确和稳定,适用于奶酪中甲醛含量的测定。[Objective]To establish a new method for the determination of formaldehyde content in cheese by headspace gas chromatography with reducing agent.[Methods] A certain amount of samples were taken to add reactive solution mixed by 0.1 mol/L sodium borohydride reducing agent and 1 mol/L Na OH with the proportion of 1 ∶10. Formaldehyde in the sample was reduced to methanol,and determined by headspace gas chromatography with FID detector after 50 ℃ water bath and the vortex. External standard method was used for quantitative determination of formaldehyde. [Results] The coefficient of the linear regression equation was higher than 0.998 within the linear range of 1.0-20.0 mg/L,and the recovery rate was 89.2%-110.8%. The detection limit was 0.75 mg/kg and the relative standard deviation(RSD) was less than 8.3%,according to the sampling volume of 2.0 g and the constant volume of 5 ml. [Conclusion] The method is simple,rapid,accurate and stable,and is suitable for the determination of formaldehyde in cheese.
