摘  要:提出并建立一种基于近红外光谱技术的普通鸡蛋、柴鸡蛋和土鸡蛋的鉴别方法。从超市购置三种不同鸡蛋,在实验室分离出每类鸡蛋蛋黄20个,共60个样品,并在4 000~10 000 cm^(-1)范围内采集所有样品的近红外漫反射光谱。在研究其近红外光谱特性的基础上,对其光谱数据进行主成分(PCA)分析,结果发现PCA方法无法完全实现三类鸡蛋的聚类鉴别。最后,建立三类鸡蛋的偏最小二乘判别模型,其对校正集和预测集三类鸡蛋进行判别,正确率均为100%。A discrimination method of ordinary eggs, flee-range eggs and native eggs was proposed and built based on near infrared (NIR) spectroscopy. Three kinds of eggs were purchased from the supermarket, and 20 egg yolk samples of each type were separated in the laboratory. A total of 60 samples were prepared. The NIR diffuse reflectance spectra of all the samples was collected in the range of 4 000-10 000 cm^-1. On the basis of studying the characteristics of NIR spectra, the principal component analysis (PCA) was carried out. It is pointed out that PCA method cannot fully realize the identification of three kinds eggs. Finally, the partial least squares discriminant analysis model of three kinds eggs was established, and the correct discrimination rotes of the three kinds of eggs were 100% for samples in calibration set and prediction set.
