摘  要:食用油脂是人体所需的重要营养物质之一,其品质的好坏直接影响着人们的身体健康与生活质量。近年来频频发生的地沟油、转基因油脂等食用油安全问题受到社会各界的关注,其相应的检测技术已逐渐成为研究的热点。另一方面,现有的油脂质量检测技术存在着操作繁琐、耗时、有机溶剂消耗大、对人体和环境影响大等缺陷,难以满足现代分析快速、便捷、绿色、环保等要求,也无法实现油脂加工过程的动态监控,因此具有快速检测和监控能力的近红外检测技术等逐渐成为研究和应用的热点。本研究对目前关注度较高的油脂常规质量检测指标的快速检测、油脂中转基因检测技术和地沟油检测方法进行简要概述,为相关的研究提供参考,为食用植物油的食品安全问题提供一定的技术支撑和研究方向。Edible oil is one of the important nutrients needed for human body. The quality of edible oil directly affects people's health and quality of life. In recent years, frequent cooking oil safety problems, such as gutter oil and transgenic oil, have attracted attention from all walks of life, and the corresponding detection technology has become a hot spot of research. On the other hand, the existing oil quality testing technology has some disadvantage such as complicated operation, time consuming, large consumption of organic solvent, and great impact on human body and environment, which is difficult to meet the requirements of modern analysis, fast, convenient, green and environmental protection, as well as the dynamic monitoring of oil processing. Therefore, near-infrared detection technology with rapid detection and monitoring capability has become a hot spot in research and application. This study briefly summarized the rapid detection of conventional oil quality indicators, transgenic detection technology in oil and gutter oil detection methods, in order to provide references for related research, and provide the technical support and research direction for food safety of edible vegetable oil.
