摘　　要：酶制剂是生产淀粉糖品和发酵产品最重要的一种材料,特别对淀粉水解工业的发展起到了巨大的促进作用,文中综述了当前在国内常用的淀粉糖工业相关的各种酶制剂的性质和应用特性。Enzymes are one of the most important materials for manufacturing starch sugars and ferment products.They have contrib uted greatly to the development of th e starch hydrolysis industry.The paper summarizes the properties and applications of all kinds of starch e nzymes mainly used at present in China.
