摘 要:【目的】为探讨日粮代谢能水平与粗蛋白质含量对5~10周龄肉鸭生长发育性能及肌肉品质的影响。【方法】选取540只5周龄苏邮2号肉鸭,采用3×3两因子设计法,设置9个处理组,每组3个重复,每个重复公母各10只,能量水平为:高代谢能(HE,12.20 MJ/kg)、中代谢能(ME,11.80 MJ/kg)和低代谢能(LE,11.40 MJ/kg),蛋白水平为:高蛋白质(HP,16.80%)、中蛋白质(MP,15.30%)和低蛋白质(LP,13.80%)。【结果】结果表明:(1)第1、2、4、5、6组试验鸭平均日增重显著地高于第3、9组(P<0.05),第3、9组料重比显著地高于其余各组(P<0.05),第5、6组试验鸭体斜长显著地高于第1、9组(P<0.05)。饲粮代谢能和粗蛋白质水平对平均日增重有显著的互作效应(P<0.05),粗蛋白质水平对体斜长有显著的影响(P<0.05)。(2)第5组试验鸭半净膛率、全净膛率、腿肌率、胸肌率与第1组相比,差异达到显著水平(P<0.05),第6组全净膛率与第1组间差异显著(P<0.05),第5、8组腿肌率显著地高于第1、2组(P<0.05),第5组胸肌率与第3组间差异显著(P<0.05)。粗蛋白主效应在半净膛率、全净膛率间达到显著水平(P<0.05),胸肌率的代谢能主效应显著(P<0.05),腿肌率的代谢能粗蛋白的互作效应显著(P<0.05)。(3)肌苷酸含量在各个试验组间以及不同肌肉组织间的差异不显著(P>0.05),但肌苷酸在胸肌中的含量普遍要高于腿肌,代谢能、粗蛋白及代谢能粗蛋白的互作效应均不显著(P>0.05)。第8组试验鸭胸肌粗脂肪含量显著地高于第1组(P<0.05),胸肌粗脂肪含量代谢能粗蛋白互作效应显著(P<0.05)。第7组试验鸭腿肌p H值显著地高于第8组(P<0.05),代谢能粗蛋白间的互作效应显著(P<0.05)。【结论】在相同饲养管理条件下,采食代谢能11.80 MJ/kg、粗蛋白15.30%的饲粮有利于5~10周龄苏邮2号肉鸭生产性能的提高。【Objective】In order to investigate the effects of energy and crude protein level on the growthperformance and muscle quality of meat duck aged from5to10weeks.【Methods】Using3伊3factorialarrangement of treatments,5405-week-old meat ducks were randomly divided into9treatments,eachtreatment3replicates,and each replicate10males and10females.Three dietary ME levels,11.40MJ/kg,11.80MJ/kg and12.20MJ/kg,and three dietary CP levels,13.80%,15.30%and16.80%.【Results】Theresults indicated that:淤the average daily weight gain of the1st,2nd,4th,5th,6th groups was signifi原cantly higher than that of the3rd,9th groups(P<0.05).The feed conversion ratio of the3rd,9th group was significantly higher than that of the other groups(P<0.05).The body length of the5th,6th group wassignificantly higher than that of the1st,9th groups(P<0.05).The interactional influence on the averagedaily weight gain was significant(P<0.05),the influence of CP on the body length was also significant(P<0.05).于The semi-evisecrated percentage,evisecrated percentage,leg muscle percentage,breastmuscle percentage of the5th group were significantly higher than those of the1st group(P<0.05),the e原visecrated percentage of the6th group was significantly higher than that of the1st group(P<0.05),theleg muscle percentage of the5th,8th groups was significantly higher than that of the1st,2nd groups(P<0.05),the breast muscle percentage of the5th group was significantly higher than that of the3rdgroups(P<0.05).The influence of CP on the semi-evisecrated percentage and evisecrated percentage wassignificant(P<0.05),the influence of ME on the breast muscle percentage and the interactional influenceon leg muscle percentage was also significant(P<0.05).盂The inosinic acid content between all groupsand different tissues had no significant difference(P>0.05),but the insomniac acid content in the breastmuscle was generally higher than that in the leg muscle,the influence of ME,CP and interaction wasnot significant(P>0.05).The crude fat content in the breast muscle
