紫薯代餐粉的研制及其冲调性研究

摘　　要：紫薯富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,还富含铁、硒元素和花青素。因此,利用紫薯本身的优点,再加入不同的辅料,可搭配出营养均衡的紫薯代餐粉。以紫薯粉为主料,辅以核桃粉、奶粉等制备紫薯代餐粉。通过对紫薯粉产品基本成分、色泽、溶解度、结块率、黏度等测定,确定最佳的配方。对紫薯进行深加工,探讨紫薯代餐粉的配方并对其冲调性进行优化。结果表明:紫薯代餐粉的最佳配方为:紫薯全粉10 g、白糖粉3 g、奶粉2 g、核桃粉3 g、麦芽糊精6 g。制得的紫薯代餐粉成品感官优良、冲调性好。Purple sweet potato is rich in protein,starch,pectin,cellulose,amino acid,vitamin and diverse mineral substances.Therefore,with different auxiliary materials,the purple sweet potato can be used to produce nutrient-balanced purple sweet potato meal replacement powder.In addition,purple sweet potato meal replacement powder can be produced by mixing purple sweet potato powder,the main materials,walnut powder and milk powder.We have measured basic component,color,solubility,agglomerate rate,viscosity of purple sweet potato to ensure the best sensory scores of each recipe.We have taken deep process of purple sweet potato and explored the recipe of purple sweet potato meal replacement powder and perfected the solubility.The results indicated that the best recipe of purple sweet potato consists of purple sweet potato powder10g,sucrose3g,milk powder2g,walnut powder3g,maltodextrin6g.The finished product of purple sweet potato meal replacement powder has good quality and solubility.
