摘 要:以鸡皮糙山药为材料,探讨其块茎发育特点及碳水化合物代谢的变化。试验结果表明,在块茎发育过程中,块茎鲜质量、体积及干物质积累持续上升;块茎头端的伸长生长持续至膨大中期;随着块茎的发育膨大,淀粉、纤维素含量逐渐增加,膨大后与膨大前相比,头端部分和中段部分淀粉增幅分别为70.07%和71.31%,可溶性糖和还原性糖含量则呈现先高后低的变化趋势,而可溶性蛋白质含量变化为高—低—高。因此,鸡皮糙山药碳水化合物代谢变化与块茎生长发育过程密切相关。This paper has explored the characteristics of development and the changes of carbohydrate metabolism with Jipicao yam tuber as material.The results indicated that tuber fresh weight,volume and dry matter content of Jipicao yam tuber were kept increasing gradually during the tuber development.The growth of the front part of Jipicao yam tuber was continued growing until the middle stage of expansion period.With the tuber gradually development,the contents of starch and cellulose ascended slightly,and starch contents were increased by70.07%and71.31%respectively in the front and middle part of yam tuber.The contents of soluble sugar and reducing sugar increased at first and decreased at last,but the content of soluble protein was appeared a tendency of high-low-high.Therefore it is suggested that the level of carbohydrate metabolism is closely related with the growth and development of Jipicao yam tuber.
