摘　　要：目的介绍一款食品安全保障箱的组装设计和检测应用。方法自行组装设计了一款对采购的食材可进行毒鼠强、氟乙酰胺、氰化物、砷、亚硝酸盐、盐酸克伦特罗、酸价和过氧化值的现场快速检测,同时可评价餐具消毒效果及监测食品烹制过程中中心温度的食品安全保障箱。结果在今年的16次军队重大任务中应用了这一款食品安全保障箱,确保了无1例食品安全事故的发生,保障效果较好。结论这款食品安全保障箱携带方便、现场操作简单、指标齐全,适合在食品安全保障任务中推广使用。Objective To introduce the assembly design and application of a quick detection box for food safety.Methods We developed a detection box for testing food safety of purchased foods.This box could be used not only for evaluating the disinfection effect of tablewares,monitoring the central temperature of cooking foods,but also for on-the-spot detection.It was able to detect various items at the same time,including tetramine,fluoroacetamide,hydride,arsenic,nitrous acid,clenbuterol hydrochloride,acid values and peroxide values.Results The box was applied to sixteen major military tasks this year and ensured that no food safety accident occurred.It was portable,user-friendly and complete in indicators.Conclusion The quick detection suitcase is suitable for popularization and applicable to food safety assurance tasks.
