摘  要:为比较海南黄牛及其杂交牛肉的氨基酸和脂肪酸含量,随机选取2岁左右、发育正常、健康无病、膘情中等的海南黄牛和海南杂交牛(海南黄牛×日本和牛)公牛各10头,分别测定其牛肉的氨基酸和脂肪酸含量。结果表明:海南杂交牛肉中天冬氨酸、苏氨酸、谷氨酸、丙氨酸、蛋氨酸、酪氨酸、氨基酸总量及鲜味氨基酸含量均显著高于海南黄牛(P<0.05),癸酸(C10:0)、棕榈一烯酸(C16:1)、十七碳一烯酸(C17:1)、油酸(C18:1)、花生一烯酸(C20:1)、亚油酸(C18:2)、单不饱和脂肪酸、多不饱和脂肪酸也均显著高于海南黄牛(P<0.05)。说明海南杂交牛肉品质明显优于海南黄牛。This experiment was to study the amino acid and fatty acid composition from Hainan native cattle and Hainan hybrid cattle.Hainan native cattle and Hainan hybrid cattle(10 heads per breed)with similar age,healthy,and medium body size in Hainan province were selected.The contents of amino acids and fatty acids were determined.The results showed as follows:the contents of aspartic acid,threonine,glutamic acid,alanine,methionine,tyrosine,total amino acids and delicious amino acids in beef of Hainan hybrid cattle were significantly higher than those of Hainan native cattle(P<0.05).The contents of decanoic acid(C10:0),palmitic acid(C16:1),ginkgolic acid(C17:1),oleic acid(C18:1),eicosenoic acid(C20:1),linoleic acid(C18:2),monounsaturated fatty acids(MUFA)and polyunsaturated fatty acids(PUFA)were also higher in Hainan hybrid cattle than the corresponding values in Hainan native cattle.In conclusion,compared with Hainan native cattle,Hainan hybrid cattle have extrusive hybrid vigor and better meat quality.
