百利包纯牛奶产品生产中HACCP质量管理体系的应用

摘　　要：百利包(PrePak)是液态乳制品的一种包装形式,是含有高阻隔材料(EVOH)的五层共挤结构塑料复合包装膜,也有用聚乙烯醇(PVA)高阻隔水性涂布液加工的无菌复合包装膜。文中就百利包纯牛奶这种产品,依据HACCP体系对生产过程进行危害分析,确定了包材灭菌、CIP清洗、原料奶验收、超高温灭菌、无菌灌装、封合成型等六个关键控制点,制定了HACCP计划,确保乳品的安全性。PrePak is a packing method for liquid milk products.Usually the packaging film containing five layers of plastic composite films made of high-barrier material EVOH in core-crust composing structure is adopted,but sterile composite packing film processed by PVA high-barrier water coating liquid is also a common approach.Here,a hazard analysis of the PrePak liquid milk product production process is conducted according to HACCP system.It is confirmed that there are 6 critical control points,which are package sterilization,CIP cleaning,raw milk receiving,ultra high temperature sterilization,packing sterilization,and package sealing.The HACCP plan is constructed to insure the quality of the milk products.
