“光盘行动”能否减少餐桌浪费——基于北京高校237份大学生问卷调查

摘　　要：近年来,餐桌浪费之风有所收敛,但高校食物浪费的现象仍然存在。实证分析北京高校237份学生调查问卷,探究高校餐桌浪费的原因和践行"光盘行动"的成效。结果显示,践行"光盘行动"一定程度上减少了高校餐桌浪费,但受个人习惯、家庭状况、就餐习惯及价值观等因素影响,减少浪费的幅度有限。据此,提出树立健康向上的饮食文化理念,调节高校餐厅菜品分量、加强校园宣传、建立打包和奖惩制度等政策建议。In recent years,the trend of extravagance converged,but the phenomenon of food waste of dining in universities and colleges'mess hall remained.Through the empirical analysis of 237 questionnaires of students in universities and colleges in Beijing,the causes of food waste in universities and colleges,and the effectiveness of the practice of"clear dishes"action were analyzed.The results showed that to a certain extent,the action could reduce the waste of grain in universities and colleges,but it was limited by personal habits,family status,dining habits and values.Therefore,reduction of waste was limited.On the basis of this,some policy suggestions were put forward,such as establishing healthy and upward food culture idea,adjusting the quantity of food in university restaurants,strengthening campus propaganda,setting up package and reward and punishment system and so on.
