摘 要:主要以棕榈酸、硬脂酸、油酸、亚油酸、亚麻酸为研究对象,研究不同植物油的脂肪酸组成差异。通过建立数学模型,判断芝麻油中掺伪油品种类及掺伪量。试验发现,掺伪芝麻油中主要的掺伪油品为大豆油,掺伪量在28%~76%。研究表明,通过建立的数学模型可以计算芝麻油中掺伪植物油的种类及掺伪量,对芝麻油的质量控制及市场监管有重要的参考意义。With Palmitic acid,stearic acid,oleic acid,linoleic acid and linolenic acid as objects,the differences of fatty acid composition in different vegetable oils were studied.The variety and amount of adulterated oil in sesame oil were determined by establishing a mathematical model.It was found that soybean oil was the main adulterated oil and the adulteration amount was 28%-76%.The research showed that the mathematical model could be used to quantify the variety and amount of adulterated oil in sesame oil,it provided signifi cance reference to the quality control and market regulation of sesame oil.
