摘  要:对上饶地区武夷山百花蜂蜜产品理化和卫生指标进行检测分析,以了解其质量安全状况。按照GB14963-2011《食品安全国家标准蜂蜜》、GH/T18796-2012《蜂蜜》进行各项指标的检测。该武夷山百花蜂蜜的色泽、气味等感官指标、菌落总数等微生物指标以及水分、果糖和葡萄糖等理化指标均符合国内外蜂蜜相关标准要求,其中羧甲基糠醛含量、淀粉酶值等指标符合优级蜂蜜的标准。该蜂蜜产品符合相关的质量安全要求,为进一步开展研究奠定基础。To definite the quality and safety of a kind of multifloral honey from Mount Wuyi in Shang-rao,the physicochemical and hygienic indexes were analyzed.According to GB14963-2011《The national standard of food safety honey》and GH/T18796-2012《Honey》,some indexes were detected and analyzed.The indexes such as the sensory requirement(color,odor),the microbial limit(total number of bacterial colonies),and the physicochemical indexes(content of water,fructose and glucose)of this product satisfied the standard of honey,and the indexes of content of carboxymethyl furfural and amylase value of this honey reaches the standard of high quality.The honey product meets the relevant quality and safety requirements.The study lay a foundation for further research of this honey product.
