摘  要:文章旨在研究日粮添加不同水平有机硒(酵母硒形式)对1~48 d肉鸭生长性能、胴体品质、组织硒含量及抗氧化性能的影响。试验选择平均体重为(56.66±0.14)g的商品肉鸭720只,随机分为4组,每组4个重复,每个重复45只。对照组不添加酵母硒,其他3组分别在基础日粮中添加0.15、0.30和0.45 mg/kg硒(以酵母硒形式),试验共进行48 d。结果显示:0.3 mg/kg酵母硒组较对照组和0.45 mg/kg酵母硒组显著提高了48 d肉鸭的体重(P<0.05);0.45 mg/kg酵母硒组较0.15和0.30 mg/kg酵母硒组显著降低了肉鸭冷胴体重(P<0.05);对照组冷胴体占比显著高于0.45 mg/kg酵母硒组(P<0.05)。与对照组相比,0.3和0.45 mg/kg有机硒组显著降低了肌肉的pH45min(P<0.05);对照组和0.15 mg/kg有机硒组屠宰后45 min肌肉温度显著高于0.3和0.45 mg/kg有机硒组(P<0.05);对照组胸肌和腿肌水分含量显著高于其他各组(P<0.05);0.45 mg/kg酵母硒组胸肌蛋白质含量显著高于对照组和0.15 mg/kg有机硒组(P<0.05),而对照组和0.45 mg/kg有机硒组腿肌脂肪含量显著高于对照组(P<0.05)。随着日粮有机硒添加水平的升高,血清GSH-Px活力和硒水平表现为显著升高(P<0.05)。随着日粮有机硒添加水平的升高,血清、肝脏、粪和肌肉中硒的水平显著升高(P<0.05)。高水平有机硒(0.45 mg/kg)显著降低了14 d肉鸭硒的吸收效率(P<0.05),但显著提高了48 d肉鸭硒的吸收效率(P<0.05)。结论 :有机硒可以显著提高肉鸭血清、肝脏和肌肉中的硒含量以及血清GSH-Px活力,其中日粮添加0.3 mg/kg硒(酵母硒)可以显著提高1~48 d肉鸭的体重。We do this trial to evaluate the effects of selenium yeast on growth performance,carcass quality,tissue selenium contents and antioxidantion of ducks.720 ducks at 1 d with the average weight of(56.66±0.14)g were allotted to 4 groups with 4 replicates of 45 ducks.The control group fed with the basal diets and the trial groups were supplementation of 0.15,0.30 and 0.45 mg/kg selenium(Se,selenium yeast)to the basal diet,respectively.The trial last 48 d.Results showed that body weight at 48 d was higher in the group with 0.3 mg/kg Se group compared to groups with no added Se and with the 0.6 mg/kg Se group(P<0.05).Cold carcass weight was significantly lower in the 0.45 mg/kg Se group compared to groups with 0.15 mg/kg and 0.3 mg/kg Se groups.Dressing percentage ranged significantly differed(P<0.05)between the control and the 0.45 mg/kg Se groups.At 45 min after slaughter,pH values were significantly lower in the group with 0.3 mg/kg Se and in the group with 0.45 mg/kg Se compared to the control group(P<0.05).The highest moisture content of breast and thigh meat was observed in the control group.Higher protein content of breast meat was found in 0.45 mg/kg Se group compared to the control and 0.15 mg/kg Se groups.The highest lipid content of thigh muscle was observed in the control group.The activity of plasma GSH-Px and Se contents differed among the four dietary treatments,increased with the levels of Se added(P<0.05).Se contents in plasma,feces,liver and meat significantly increased with the Se levels in the diet(P<0.05).At 14 days old,assimilation efficiency was the lowest(P<0.01)in ducks fed diets with the highest level of Se(0.45 mg/kg),while the lowest(P<0.05)assimilation efficiency was determined in the control group.In conclusion,we find that Se supplementation increased significantly Se levels in plasma,liver and muscles,as well as activity of plasma GSH-Px in ducks.The highest body weight was achieved by addition of 0.3 mg/kg of Se in diet.
