摘　　要：存在于人类食品和畜禽饲料中的真菌毒素,尤其是脱氧雪腐镰刀菌烯醇(DON)、玉米赤霉烯酮(ZEN)、黄曲霉毒素B1(AFB1)对人类和动物健康可造成严重危害。肠黏膜层、肠黏液、肠道微生物菌群对肠道健康起到重要保护作用。了解真菌毒素如何与肠屏障相互作用,尤其是真菌毒素对肠上皮细胞、黏液和微生物菌群之间的影响,对阐明真菌毒素的毒性作用具有重要意义。论文总结了近年来3种主要真菌毒素对肠道屏障的影响,为防控真菌毒素中毒提供参考。Mycotoxins,especially deoxynivalenol(DON),zearalenone(ZEN)and aflatoxin B1(AFB1)present in human and animal feed can cause serious harm effects in humans and animals.Intestinal mucosa,intestinal mucus,intestinal microbial flora play an important protective effect on intestinal health.Understanding how mycotoxins interact with the gut barrier,in particular the effect of mycotoxins on intestinal epithelial cells,mucus,and microbial flora,is important for elucidating the toxic effects of mycotoxins.Therefore,this article summarized the impact of three major mycotoxins on the intestinal barriers in recent years and provided a theoretical basis for future prevention and control of mycotoxin poisoning.
