摘 要:目的以苦瓜、咖啡、木糖醇和柠檬酸为原料,研制苦瓜咖啡饮料,并对该饮料的减肥功能进行研究。方法通过正交试验,确定了苦瓜咖啡饮料的配方,开发出了一种口味良好、具有一定保健功能的饮料。将30只成年C57BL/6小鼠按体重随机分为3组,即空白对照组、高脂模型组、高脂实验组,每组10只。其中,空白对照组给予普通饲料;其余各组均给予高脂饲料;高脂实验组灌胃苦瓜咖啡饮料;高脂模型组灌胃等体积水;每天1次,连续30 d。采用全自动生化分析仪测定血清中葡萄糖(Glu)、总胆固醇(TC)、甘油三酯(TG)、高密度脂蛋白胆固醇(HDL-C)和低密度脂蛋白胆固醇(LDL-C)的含量。结果结果表明,最佳配方为:苦瓜∶咖啡为50∶50(质量比),木糖醇25%,柠檬酸0. 5%,黄原胶0. 25%;高脂实验组小鼠血清中的葡萄糖、TC、TG和LDL-C的含量均显著降低(P <0. 05),并且HDL-C的含量显著升高(P <0. 05)。结论苦瓜咖啡饮料具有明显的减肥降脂作用。Objective A new kind of weight loss functional coffee drink named balsam pear coffee mixed with balsam pear,coffee,xylitol and citric acid as raw materials was processed.Methods The processing conditions and formula of the drink with nice flavor and health-beneficial functions were determined by orthogonal test method.Totally C57BL/6 rats were randomly divided into three groups based on body weight:normal control group,high-fat control group,high-fat experimental group.Rats in normal control group were fed with chow diet,while rats in other groups were fed with high-fat diet.The rats in high-fat experimental group were given balsam pear coffee mixtures,while rats in high-fat control group were given the same volume of water by gavage daily for 30 days respectively.Automatic biochemical analyzer was used to determine the serum levels of glucose,total cholesterol(TC),triglyceride(TG),high-density lipoprotein cholesterol(HDL-C)and low-density lipoprotein cholesterol(LDL-C).Results The optimum processing condition was balsam pear:coffee ratio of 50∶50(weight ratio),adding 25%of xylitol,0.5%of citric acid and 0.25%of xanthan gum.Compared with the high-fat control group,the levels of serum glucose,TC,TG and LDL-C of rats treated with balsam pear coffee mixtures group were reduced(P<0.05),while the serum HDL-C levels were increased remarkably(P<0.05).Conclusion Balsam pear coffee had functional effects of reducing weight.
