摘 要:本研究旨在探索一种减轻呼伦贝尔草原压力的羔羊舍饲育肥方式。选择50只日龄相近、体重为(17.00±1.55)kg的呼伦贝尔羯羊,随机分为5组(4个舍饲组和1个放牧组)。在4个舍饲组中,CK组饲喂基础日粮,AS组、LE组、VE组分别在基础日粮中添加2 000 mg/kg苜蓿皂苷、3 000 mg/kg甘草提取物、400mg/kg维生素E;放牧组(GZ组)限时放牧4h并补饲精料。试验期60d,试验结束后羔羊全部屠宰。结果表明:GZ组羔羊30~60 d日增重显著高于CK组(P<0.05);CK组羔羊的背膘厚度以及肾周脂肪重量显著高于GZ组(P<0.05);GZ组羔羊的肌肉色泽(L*_(48 min)、H°_(48 min)、a*_(24 h),b*_(24 h)、C*_(24 h))显著高于CK组(P<0.05);添加剂组(AS组、LE组、VE组)羔羊的肌肉色泽(a*_(24 h)、C*_(24 h))显著高于CK组(P<0.05)。综上所述,呼伦贝尔舍饲羔羊脂肪沉积较放牧补饲羔羊高,但肉色差;抗氧化剂的添加明显改善了舍饲羔羊的肉色,提高了肉品质。建议对当地呼伦贝尔羔羊进行舍饲育肥,并合理添加抗氧化剂替代传统放牧饲养,来减轻草原压力,提高舍饲羔羊肉品质。The aim of this study was to explore a way for the indoor fattening lambs to reduce the pressure of grassland in Hulunbeier. Fifty weaned Hulun buir lambs of similar age and weight(17.00±1.55 kg) were randomly divided into five groups. Among the four indoor groups, CK group was fed with basal diet, and AS, LE and VE groups were fed basal diet respectively with 2 000 mg/kg of alfalfa saponin, 3 000 mg/kg of liquorice extract and 400 mg/kg of vitamin E. The grazing group(GZ) was restricted access to pasture in the afternoon for 4 hours combined with concentrate. The experiment lasted for 60 days of feeding prior to slaughter. The results showed that: the daily weight gain of 3060 days of GZ group was significantly higher than that of CK group. The back-fat thickness and kidney fat weight were significantly higher in CK group than those in GZ group(P<0.05). The muscle color of GZ group(L*48 min, H°48 min, a*24 h, b*24 h, C*24 h) was significantly higher than CK group. The a*24 h and C*24 h value in antioxidant groups(AS group, LE group, VE group) were significantly higher than CK group(P<0.05). In conclusion, feedlot lambs had higher fat deposition than lambs with restricting access to pasture, however the meat color was poor. The addition of antioxidants significantly improved meat color and meat quality compared of indoor lambs. It is recommended that the lambs should be fed and fattened in house with rationally antioxidants supplementation instead of traditional grazing to reduce grassland pressure and improve the meat quality of lambs in Hulun Buir.
