摘 要:本试验旨在研究去势对小尾寒羊公羔育肥期生长性能、屠宰性能和肉品质的影响。选择体况良好、体重为(18.12±2.86)kg的3月龄小尾寒羊公羔24只,随机分为对照组和去势组,每组12只,2个处理组分栏饲养,去势组公羔手术摘除睾丸。预试期7 d,正试期60 d,试验期间记录羔羊初始体重、末重以及日采食量。正试期结束时每组随机选择4只羔羊进行消化代谢试验,试验结束时,每组随机选择6只屠宰,检测去势对公羔屠宰性能及肉品质的影响。结果表明:去势使羔羊日增重降低26.9%(P<0.05),耗料增重比增加50.5%(P<0.05),对羔羊末重及日干物质采食量无影响(P>0.05);去势对公羔能量代谢、氮代谢及其他营养物质表观消化率无影响(P>0.05);去势对公羔屠宰性能、内脏重及消化器官重量无影响(P>0.05);去势对公羔肉pH24h、肉色、粗脂肪、粗蛋白质含量以及粗灰分无影响(P>0.05);去势显著降低了公羔肌肉中亚油酸、二十一碳酸、花生四烯酸、二十三碳酸、二十四碳酸和二十二碳六烯酸含量(P<0.05),对其他18种脂肪酸含量无影响(P>0.05);去势对公羔肌肉中8种必需氨基酸和10种非必需氨基酸含量无影响(P>0.05)。本研究表明小尾寒羊公羔3月龄去势降低了羔羊生长性能,改变了羊肉中部分脂肪酸含量。This study was conducted to investigate castration on growth performance,slaughter traits and meat quality in male small-tail Han lamb.Twenty-four 3 months old male lambs(18.12±2.86 kg)were assigned to two groups(n=12)which the control and the removed testis group.The experiment lasted for 60 days.Body weight and feed intake were recorded.Four lambs from each group were chosen randomly used in a digestive and metabolic trial.Six lambs from each group were slaughtered at the end of experiment.Castration decreased average daily gain by 26.9(P<0.05),increased F/G by 50.5%(P<0.05).The final weight,average feed intake,energy metabolism,nitrogen metabolism,the apparent digestibility of nutrients,slaughter traits,the weight of viscus and digestive organs,pH24,meat color,fat and protein in meat,and crude ash were not influenced by castration.Castration decreased linoleic acid,heneicosanoic acid,arachidonic acid,tricosanoic acid,teracosanoic acid,and DHA in longissimus dorsi muscle(P<0.05),but changes in amino acid contents were not significant.These data indicate that castration decreased the growing performance and changed the contents of some fatty acid.
