摘  要:本文以紫甘薯为原料,采用微波辅助法提取其中的花青素。考察了汽化剂浓度、紫甘薯粉与汽化剂比例、微波功率、微波时间对花青素提取的影响。采用Fenton法、邻苯三酚氧化法、DPPH法研究其抗氧化活性。结果表明,微波辅助法最佳提取条件为:75%乙醇溶液作为汽化剂,紫甘薯粉与汽化剂比1:1.6(g:mL),功率288 W下微波15 s,在此条件下提取率为86.7%。紫甘薯花青素具有较高的清除·OH、O_2^-和DPPH的能力,花青素浓度为2.5 mg/mL时,清除·OH和O_2^-能力分别为54.89%、57.67%;花青素浓度为1 mg/mL时,清除DPPH能力高达99.08%。In this paper,anthocyanins from purple sweet potato were extracted by microwave-assisted extraction.The effects of vaporizer concentration,ratio of purple sweet potato powder to vaporizer,microwave power and microwave time on the extraction of anthocyanins were investigated.The antioxidant activity was studied by Fenton method,o-benzene three phenol oxidation and DPPH method.The results showed that the optimum conditions for microwaveassisted extraction were as follows:75%ethanol solution,1:1.6(g:mL)ratio of purple sweet potato powder to vaporizer,microwave power288W,microwave time15s,the extraction rate was86.7%under this conditions.Purple sweet potato anthocyanins had higher ability to scavenge OH,O2^-and DPPH,and the scavenging OH and O2^-abilities were54.89%and57.67%respectively when the concentration of anthocyanins was2.5mg/mL.When anthocyanin concentration is1mg/mL,the scavenging capacity of DPPH is as high as99.08%.
