摘  要:食品科学技术研究是当今中国乃至世界的热点科研领域。文章采用文献计量的方法,以Web of Science科研资源库为基础,对2000~2017年中国、美国、法国和日本主要农业科研机构的食品科学技术研究出版文献从数量、引用、研究方向等多个方面进行分析,以期了解中国农业科研机构食品科学和技术研究的发展现状以及在国际食品科技研究领域的发展水平和所处地位。研究显示,中国农业科研机构在食品科学和技术研究领域的科研活动渐趋活跃,科研水平与影响力逐步提高,但在高水平与影响力及特定研究方面与世界一流农业科研机构还存在较大差距,应进一步增强。Food science and technology is a hot research area in China and world.Based on Web of Science Core Collection Database,the food science and technology literature created by agricultural research organizations in China,USA,France and Japan during 2000 and 2017 were analyzed from various aspects such as output,cited number as well as research areas in a bibliometric method to explore the evolution and current status.The study showed that Chinese agricultural research organization′s research activities and their academic influence had been increasing;however,there still was a gap on the high-level and influential research outputs between China′s and the world-class agricultural research organizations.
