固液结合生产根霉曲工艺研究

摘　　要：利用根霉生产根霉曲已经得到广泛推广和应用,根霉曲生产工艺也不断完善。本文分析了根霉曲固态生产工艺存在的问题及原因,结合生产实践,探讨了根霉曲固液结合工艺关键工序:种子液的制备、接种量、接种方式及拌和措施的选择,进一步完善了根霉曲生产工艺,从菌种的角度保证了大生产根霉曲成品质量的稳定,为根霉曲的安全高效生产提供参考。Using Rhizopus to produce the Rhizopus Koji has been widely spread and applied,the production technology of Rhizopus Koji is also improving.This paper analyzes the existing problems of solid state production process of Rhizopus Koji and cause of the problems,combined with production practice.The key working procedure of the solid-liquid combined process of Rhizopus Koji were discussed:preparation of seed liquid,inoculation quantity,choice of inoculation methods and mixing measures.The production process of Rhizopus Koji is further improved,the quality and stability of mass production of Rhizopus Koji are guaranteed from the perspective of strains.It provides the thought and reference for its safe and efficient production.
