摘  要:该文对湖南省凤凰、永顺、花垣3个县稻田养殖鲤鱼与池塘养殖鲤鱼肌肉营养成分进行分析。结果表明:稻田养殖的鲤鱼肌肉中的水分、灰分、粗蛋白、天冬氨酸、苏氨酸、丝氨酸、丙氨酸、赖氨酸、组氨酸、精氨酸与池塘养殖鲤鱼肌肉中的含量差异具统计学意义;稻田养殖鲤鱼肌肉中的饱和脂肪酸和单不饱和脂肪酸总量要低于池塘养殖鲤鱼肌肉中的脂肪酸,而稻田养殖鲤鱼中的多不饱和脂肪酸含量要高于池塘养殖鲤鱼的多不饱和脂肪酸;其中稻田养殖鲤鱼肌肉中的必需脂肪酸花生四烯酸显著高于池塘养殖。The muscle nutrition of farm pond carp and rice field carp from Fenghuang, Yongshun and Huayuan counties were analyzed. The results showed that moisture, ash, crude protein, aspartic acid, threonine,serine, alanine, lysine, histidine, arginin in muscle of common carp from rice field had significant differences to that from pond. The total amount of saturated fatty acids and monounsaturated fatty acids in the muscle of cultured carp in rice fields was lower than that in the muscle of cultured carp in ponds, while the polyunsaturated fatty acid content was reversed, and the essential fatty acid arachidonic acid in the muscle of cultured carp in rice field was significantly higher than that in pond culture.
