摘 要:为研究低分子壳聚糖对肉鸡生产性能及脂质代谢的影响,将300只42日龄怀乡鸡随机分成5组,每组6个重复,每个重复10只,分别饲喂基础日粮及基础日粮中添加0.20%、0.40%、0.60%、0.80%低分子(<5000Da)壳聚糖的日粮,试验期42d。每周称重并统计采食量,试验末从每个重复选取1只接近平均体重的鸡测定屠宰性能指标及肉品质。结果表明:①添加低分子壳聚糖对生长性能没有显著影响(P>0.05);②屠宰率、半净膛率、全净膛率、胸肌率、腿肌率组间差异不显著(P>0.05),但添加壳聚糖显著降低怀乡鸡的肝脂率和腹脂率(P<0.05),随着壳聚糖添加量的增加肝脂率和腹脂率均呈折线下降变化,其最佳降脂效应的添加水平分别为0.66%、0.56%;③各项胸肌肉品质指标组间均差异不显著(P>0.05),但添加壳聚糖有降低胸肌滴水损失的趋势(P<0.1),趋势分析呈折线变化,其最佳效应的添加水平为0.53%。综上,添加低分子壳聚糖对怀乡鸡的生长没有影响,但能显著降低肝脂和腹脂沉积,有改善肉品质的趋势,其适宜添加水平为0.58%。The experiment was aimed to study the effects of supplemental different level of low molecular chtosan on growth,carcass characteristics and meat quality in Huaixiang chicken.A total of 300 forty two old chicks were randomly allocated into 1 of 5 groups for 6 replicates of 10 birds each and fed with the basal diet containing the low molecular chitosans(<5000 Da)at the level of 0%,0.20%,0.40%,0.60%and 0.80%for 42 days.Results showed that supplemental chitosan had no influence on growth performance of chickens(P>0.05).The dressed rate,chamber half net rate,all eviscerated rate,breast muscle rate and leg muscle rate were not affected by chitosan supplmentation(P>0.05).The liver fat percent and abdominal fat rate showed the broken line change as the chitosan increased,with the optimum level of chitosan 0.66%,0.56%.There was a tendency of decreasing drip loss of breast muscle in broilers(P<0.1)with the optimum level of chitosan 0.53%.Chitosans did not affect meat color,pH values or shear force(P>0.05).It was concluded that addition of chitosan had no influence on growth performance,decreased the body lipid deposit and tended to improve the meat quality.The optimum supplemental level of chitosan(<5000 Da)for Huaixiang chichen seemed to be 0.58%.
